I tried making macarones again, this time with more success. They dried for 60 minutes and had a beautiful ruffle (no, I'm not making this up: The lower part where they rise is called ruffle). The taste was great again, but I think I should try other colours. The red food colour makes them look fleshy - like salmon- which I didn't like. Flavour was vnilla again, with dark chocolate ganache for filling.
